Sweet Potato Muffins…Sweet! March 27, 2015. March 27, 2015. Here we are again from Simple Times Farm and spring has surprised us with twin goats! How cute are they, right? One boy, one girl pictured with my beautiful mother-in-law and Simple Times Farm Owner/Farm Manager. Now, on to the recipe. Admittedly, I did not come up with the recipe on my own or by trail and error. This recipe originated from Gwyneth Paltrow as shown on the Rachel Ray Show. 1 large sweet potato. 1/2 cup extra virgin olive oil.

May 28, 2015. May 29, 2015. This past weekend, there was a wedding held here at Simple Times Farm and WOW…was it beautiful! Overall the wedding was real laid back! The flower girl was deamed the “corn girl” for the wedding since she threw corn and we all called for the chickens to come as the bride walked down the aisle! It was fun, unique, special and…well, beautiful! As the doves went up into the air (thanks to helium) the wedding party lifted shot guns filled with blank shots and aimed at the doves!

June 25, 2015. November 11, 2015. This entire time of living on the property has also included a mulberry tree but we had yet to make mulberry jam…until now that is! We then added in 2 cups of water to the mulberries in a pot over the stove. We brought this mixture to a boil. We then added in 4 cups of sugar and 4 ounces of low-sugar pectin.
