This is a tasty side that packs alot of protein. Quinoa is the only whole grain that provides all essential amino acids, so it’s perfect a vegetarian dinner. 2 cups low sodium chicken or vegetable broth. 1/4 cup onion, chopped. 1/4 cup green onions, chopped. 1/3 cup fresh parsley, chopped. 1 Tbsp olive oil. Salt and Pepper to taste.
