These are one our favorite quick week night dinners. It's simple. It's delicious. 1 large Sweet Potato or Yam, peeled and diced. Oil to coat the above. 1 avocado, peeled, pitted and diced. 2 tablespoons sour cream or vegan alternative. 1 tablespoon plain yogurt, dairy or vegan. 1 heaping teaspoon chipotle puree*. I needed a little something this afternoon (this is a common trait of mine, no? To go with my cup of decaf cafe au lait. So I got the food processor down and started pulling ingredients that sounded good. No recipe, just improv for food. The results are delicious! Here's what went into them:. 1/2 cup oats, ground to a coarse meal in the food processor.
