Life One Day at a Time. It’s time…. Spicy Peanut Noodles →. May 18, 2010. A classic in the Z household from “More with Less”. Saute in large pan:. 1/4 c butter; 3/4 c. chopped celery; 3/4 c. chopped onion. 6 c water; 3/4 c. lentils. Cook 20 minutes. Add:. 1 qt tomatoes, canned; 3/4 c. barley or brown rice; 2 t. salt; 1/4 t. pepper; 1/2 t. rosemary; 1/2 t. garlic salt. Simmer 45-60 minutes (I usually let it simmer for longer). Add:. 1/2 c shredded carrots. Cook 5 minutes, and serve. It’s time….

July 26, 2014. 2 cups uncooked regular rice. 2 medium onions, chopped (1 cup). 4 Tablespoons vegetable oil. 2 can (8 ounces) tomato sauce. 1 green bell pepper, chopped. 1 1/2 teaspoon chili powder. 1/2 teaspoon garlic powder. Chop onions into small pieces. Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender. Ground Beef for Tacos.

Life One Day at a Time. Stuffed Bell Peppers →. July 26, 2014. In a bowl, mix the following Ingredients:. Small red onion, chopped fine. Green onions, chopped fine. Green pepper, chopped fine. 1 red pepper, chopped fine. 1 can white shoepeg corn (drained and rinsed). 1 can black eyed peas (drained and rinsed). In another smaller bowl, mix the following and then add to the other mixture:. C White wine vinegar. C Red wine vinegar. 4 T Veg. oil (mixed with C. Water). 2 Tsp tiger sauce. Mix well and enjoy!

Life One Day at a Time. Fish Tagine with Preserved Lemon and Tomatoes →. July 31, 2015. 2 T Olive Oil. C finely diced onions. C finely diced carrot. 1 14 oz. can of low sodium chicken broth. 1 C Israeli couscous. Heat oil over medium-high heat in a saucepan. Add onion and carrot and sauté for 3 minutes. Add couscous, salt, pepper, turmeric, garam masala, cumin and brown for 2 minutes. Bring to a boil. Stir in peas, turn stove to low and cook for 12-15 minutes. Let stand for 5 minutes.

Life One Day at a Time. Spanish Rice →. Ground Beef for Tacos. July 26, 2014. 2 lbs of ground beef. 1 med Onion, chopped. 1 T Vegetable oil. 2 T chili powder. Crushed red pepper flakes. 2 t sea salt. 2 t black pepper. In a small bowl, mix together all the spices and set aside. On medium heat, sauté chopped onion in a pan with the oil for 5-7 minutes. Add beef and cook until there is no more pink. Drain the meat. Stir in taco spices and keep it on low heat until ready to serve. Spanish Rice →.

Life One Day at a Time. Newer posts →. November 21, 2015. Cucumber peeded and diced. 1 C greens (kale, spinach, etc.). 4-5 Tbsp lemon/lime juice. C virgin olive oil. Add 1 C of quinoa to 2-2 C water. Bring to boil, then reduce heat and cook until tender and water is absorbed. While cooking quinoa, chop the veggies and prepare the dressing and mix in a bowl. Let quinoa cool for about 5 minutes, then add to veggies/dressing. Add feta if desired. Fish Tagine with Preserved Lemon and Tomatoes. August 7, 2015.
