March 16, 2015. So what is it? Traditionally used in Indian cooking, ghee is a clarified butter, from which the fat solids and dairy proteins have been removed. Made from either cow or buffalo milk, it is heated, after which it separates into three parts: the fat solids and dairy proteins sink to the bottom, the top layer is water, and the middle is the golden oil also known as ghee. I’ll spare you the play-by-play, but here are some of the highlights:. I love taking Vinyasa Flow first thing, especially with the timing of the sunrise in the middle of class. It’s so rejuvenating.
