Boned out pigs head, seasoned, wrapped up into roast, trussed, roasted, cooled, then sliced thin. Boy do i love my job. At this point the pigs head is wrapped up and stuffed with herbs. the head to the left is shaped only because of the way it is rolled up (no bones). to the right is obviously the skull of the pig. Did you spot the pigs kidneys?
