With its soft crumbly inside and sugary crunchy lemony topping … just heavenly with a big mug of coffee on a chilly afternoon. 225g butter, softened. Lemons, 3 zested, 2 juiced. 4 medium eggs, lightly whisked. 1 tsp baking powder. Preheat your oven to 180 C (160 C fan). Butter and line the base of a 20cm cake tin.
