The Carrot verses Beta-Carotene Supplements - AO Part 4. Beta-carotene is one of the major sources of vitamin A. One molecule of beta-carotene can be cleaved by a specific intestinal enzyme into two molecules of vitamin A. It is almost impossible to overdose on beta-carotene by eating raw carrots (with 1% absorption). However 93% of beta-carotene in supplements is absorbed resulting in many cases of vitamin A overdose. A raw carrot is nature’s way of providing vitamin A without overdosing.
