Tuesday, December 11, 2012. Carrot Sesame Spice Cookie. Makes about 40 cookies. Preheat oven to 350 degrees F. 1/3 cup almond milk (or other non dairy milk). 1 tablespoon ground flax seed. 1/2 cup coconut oil, melted (soft butter may be used). 2 teaspoons vanilla extract. Finely shredded zest of one whole orange. 1/2 cup golden raisins. 1/4 teaspoon ground cloves. 1 teaspoon baking powder. 1/2 teaspoon sea salt. 1 3/4 cup all-purpose flour (unbleached). 3 tablespoons sesame seeds. 1/2 cup shredded coconut.

Tuesday, July 1, 2008. Well the kids finally got out of school on June 21st. Ahh. The lazy days of summer. It's great for about 2 days and then I start going crazy. Well I decided this year to have the kids set some summer goals for themselves in our FHE. I had them imagine what they wanted to be like and what they want to be doing in five years. Then I had them write/draw a picture of themselves in five years. It was too funny. Kaitie. Even went so far as to list who she was going to be dating. Ummmm.

Our Clogging National Competition was at Lagoon in May- I took the 3 teams that went to competition in Pocatello. We had a blast- the weather was perfect, the kids had a ball on the rides all day, and my teams did awesome! We came home exhausted- with trophies, medallions, and happy memories. It's perfect for busy nights because it comes together really quickly. 1 quart chicken stock. 1 stalk lemon grass, white part-cracked open with flat side of knife or a meat mallet. 3 kaffir lime leaves, fresh or dried, hand torn. 1 (3-inch) piece fresh ginger, peeled and thinly sliced. 2 small Thai chilies, halved lengthwise. 2 garlic cloves, crushed.
