Aware that my family's diet needed a makeover, I started working on a meal plan for us quite some time ago. My girls always (well, maybe always is a bit of an exaggeration, but often) go to this awesome site called World's Healthiest Foods. Well, according to the questionnaire, one of the best foods for me to add to our diet is spinach. I got the bright idea of looking up spinach recipes online. Guess what?

One of these things is tomato soup, in our household. So here's what I do for that particular item:. Condensed Tomato Soup replacer. 1/2- 60z can tomato paste (this is 3 ozs just to be clear). 1 t sweet rice flour. 1/8 t onion powder. 1/8 t garlic powder. 1/8 t celery seed, powdered. My health is not what it used to be and I honestly forgot for a while why I used to love baking and cooking. Now that I've remembered (for me, it's a familial connection from mother to daughter through the generations), I am learning to accept that it can also be a mother to son connection. Thus, homemade sloppy joes, which I must say, seem to taste better than the canned version. 1 lb ground pork (or beef, but I can’t have beef! 4 Tbs minced onion. 3 Tbs minced sweet pepper. 1/4 tsp. garlic powder (optional). 1 tsp prepared mustard. 2/3 c ketchup (I use Simply Heinz, made with sugar).

Tuesday, October 2, 2012. Arsenic found in rice? I saw a news clip on arsenic in rice recently and then received an email from a gluten free blogger about it. She linked to consumer reports. Who has apparently done a lot of recent researching and data collecting on this.I don't use rice flour in much of my baking anymore, but do use brown rice pasta, and eat rice often since we eat a lot of Spanish and Asian ethnic dishes. Also, some of the highest levels of arsenic were found in infant rice cereal!

Friday, January 28, 2011. Hoppin' Johns {BLACK EYED PEAS}. I learned this the "hard" way, pun intended. So throw your salt in at the end. Now lentils and BEP's don't take that long to cook at all (about an hour) and would fall apart if soaked overnight. When I remember, I soak them for an hour before cooking. The salt rule doesn't seem to apply to either of these. Hoppin' Johns usually have rice in them, but we prefer them without. 1 cup turkey bacon or turkey ham. 1 onion, diced. 1 red bell pepper, diced.
