Do inglês Advanced Glycation End Products: produtos de glicação avançada, são compostos formados pela reação não enzimática entre açúcares redutores e grupo amino livres de proteína, lipídeos e ácidos nucleicos. Nos alimentos essa reação é conhecida como Maillard. Esses compostos alteram a estrutura e função das moléculas e aumentam o estresse oxidativo em sistemas biológicos.
