I'm still experimenting, but I figured I'd post findings so others can play with it too. After watching the last half of an episode of "You Are What You Eat" on BBC America, I took an idea she had and ran with it. I did not look up any recipes of hers. This was so quick and easy! I think next time I'll bake the crust a little first so it's crispier. I also need to figure out how to keep it from sticking, but the stickage was minimal. For lunch I made a pizza. 1 tsp garlic powder. 1 tsp dry oregano.

Inspired by a post a friend of mine made that was a bean and lentil soup, I decided to build my own with what I had in the pantry. 1/2 cup dry lentils (I used red). 1/2 cup uncooked quinoa. 1 can garbanzo beans (drained and rinsed). 1 can black beans (drained and rinsed. 1 can corn (with liquid). 1/2 bag of frozen spinach. 1/2 cup sweet onion, chopped. 4 cloves garlic, chopped. 1 tsp dry basil leaves. 1 tbsp Caesar salad dressing (I buy Kraft because it's gluten free). Salt and pepper to taste.

Completely Vegetarian Gluten Free dinner. This was dinner for my family of four tonight. Even the picky eating 11 year old liked it. This is a meal that is relatively low calorie, low fat, high protein and delicious. The olives give it a bit more sodium, but for those on a low-sodium diet (like me) can avoid adding salt and leave the olives for flavour. Quick, easy lentil soup. It's rainy and cold today and I decided I wanted to make something nice and warm for my vegetarian teen's after school snack. Curried Lentils for today. I felt like curry today so I made this up. It turned out really nice. I served it with a little crumbled goat cheese and it was delicious. 1 cup dry lentils. Cook lentils until water is gone. remove from heat. In a large pot, saute melt 1 tbsp butter with 1 tsp olive oil. Saute 1/2 cup chopped sweet onion and 2 large cloves of minced garlic. Toss lentils into pot. Add 1 cup low sodium chicken broth and 2 cups frozen chopped spinach. Stir and let simmer until spinach is warmed.

I'm trying to think back to what the locals were eating/serving on the various islands we visited when I was younger. This isn't a complete list. but it should help for those interested in pursuing an island diet. From what I can tell now, the carbs and fat were gotten from coconut, pork, taro, sugar cane and breadfruit. Roast pork, grilled or roasted fish, eggs, chicken, crab and crayfish, squid and octopus, eel, turkey tails. Onions, coconut: milk, meat, and juice, hearts. Palm nut, hearts of palm.

Yesterday on lunch, I hit a Carniceria (I think I spelled that right). it's a Mexican grocery/butcher shop. I'd never been in there before and I found in Tucson that meat was better and cheaper at these places than the grocery store. and less likely to have been Carbon saturated for colour. Anyway, they had a little display of cooked stuff for lunch. In the case was whole deep fried talapia. WHOLE, yeah eyes and all. I just HAD TO pick one up. 2 tbsp chopped red onion. 1/4 cup chopped cilantro.

A couple folks have pointed out that Xenu is something in Scientology and so I looked into changing the name of the group. Not that it would change the group in any way, it just might get more people with a different name. I'd never heard of it myself.
