Gajar ka halwa is a heavenly Indian dessert made with carrots, milk, ghee, sugar.and of course lots of patience. It takes around an hour of continuous/frequent stirring. This pudding is best had warm by itself or with vanilla ice cream .yes ice cream! 8 cups freshly grated carrots. 1/2-3/4 cup melted ghee. 1/4 gallon whole milk. Handful toasted cashew nuts and raisins.

I have to start off by saying that as much as I enjoy making this dish, the results just blow me away.everytime. A far cry from butter and cream laden versions, this recipe is just as creamy and delicious. Thanks to my sister for this great recipe. Replace panneer with extra firm tofu for a healthier version. 1 cup fresh baby green peas.
