The City Brewer: NHC 2010 Results

http://citybrewer.blogspot.com/2010/04/nhc-2010-results.html

Wednesday, April 28, 2010. So this year, I was a bit bummed not to make it back to Philly to judge again in the NE region of the NHC. However, I did enter three beers. I thought these would be my three best I've made in the passed year. I entered: Christmas Saison, Funky Belgian Stout (tasting to follow in a few days, recipe unfortunately lost), and my Oat Wine. Said the roast was lacking but the wild yeast was great. The other said "don't change anything! May 3, 2010 at 12:19 PM. May 4, 2010 at 2:16 AM.

The City Brewer: Beer and non Beer news

http://citybrewer.blogspot.com/2010/05/beer-and-non-beer-news.html

Tuesday, May 11, 2010. Beer and non Beer news. Just a quick post to talk about some upcoming brews. I'm still really excited to get all the carboys filled! Now I've started building up the pack and I may still do a Blackberry, all Brett L wheat, but probably another week or so away. The other big news is I got engaged! Other than that, I have some plans to knock out a Americanized mild this week and a Belgian Barleywine with the cake from the " Saison. Or Oud Bruin,. I'll see which seems more ready.

The City Brewer: Long Aged Homebrews

http://citybrewer.blogspot.com/2010/04/long-aged-homebrews.html

Wednesday, April 14, 2010. Anyone else have good/bad results with an aged beer, hopefully something over a year or so? As an aside to photog snobs, I know the white balance is off, but I really like the strong blue tint I got to this shot). April 14, 2010 at 7:29 PM. The clove is only in the flavor. The aroma is still what you might expect from a tasty bourbon/oak/vanilla stout.). But its sooo delicious! April 15, 2010 at 2:14 AM. Jaymo, Im curious whether the clove came from a brett infection? I dont th...

Do robots dream of electric beer? – The Smoking Bottle

https://thesmokingbottle.com/2015/11/23/do-robots-dream-of-electric-beer

In search of great beer and fire cooked food. Do robots dream of electric beer? November 23, 2015. February 3, 2016. Homebrewing is always evolving. In the old days, brewers had to make do with what information, ingredients, and materials they could get their hands on. Today there is a wealth of information online and in print and numerous retailers supplying high quality ingredients. This availability has helped bring in new brewers and broadened the homebrewer profile. When the Picobrew Zymatic. I too ...

The proof is in the barrel – The Smoking Bottle

https://thesmokingbottle.com/2011/12/14/the-proof-is-in-the-barrel

In search of great beer and fire cooked food. The proof is in the barrel. December 14, 2011. December 14, 2011. I’ve had a few chances to play around with the Gueuze barrel chips. Now and thought I’d share my findings (on both grilling use and beer use). The chips have been used to add some smoke to pork, fish, and numerous chickens. Result… Shocker, the smoke flavor is just like oak! Gueuze Barrel chips are great for a quick burst of smoke when grilling. Don’t bother using them for long smokes. Click to...

In search of great beer and fire cooked food. Daddy’s little helpers. January 20, 2014. January 20, 2014. First off, for the past couple years I have been using terracotta flower pot bases and tin-foil in my water pan instead of water. This is definitely nothing new. In search of great beer and fire cooked food. February 8, 2016. February 10, 2016. Near her office, part of my brain woke up from its coffee coma. After 10 years I was addicted again. The smell of good coffee puts me in a euphoric trance. A complex melange of nuts, chocolate, leather, earth, tobacco, ripe fruit, leaves, and more. When something like that gets a hold of my imagination I want to dive into it. For their rotisserie (Only in Europe at the moment). It looked perfect. But would it work? On my f...

rant – The Smoking Bottle

https://thesmokingbottle.com/category/rant

In search of great beer and fire cooked food. Rant: hit with the ugly brick. October 26, 2011. The monks at the Sint-Sixtus abbey have been well know for brewing up some top-notch beers. Look at any beer ranking site and Westvleteren 12 is sure to be close to the top. It is also one of the facts that every Belgian likes to spout at Americans who start talking about beer. That statement is then usually followed by something like, much better than your Bud, eh? Where I work, my boss decided that I, being t...
