As for what I have been eating this week – oat groats, fresh juices (including a peach-strawberry-lemonade), apples, kale salads (my fav), raw lasagna, nut tacos, ALTC sandwiches on Ezekiel bread (avocado, lettuce, tomato, cashew cheese), chia seeds – chocolate, and a few Lara bars. Here’s the recipe for the beet and arugula salad we made for dinner last night. Arugula with Golden Beets and Walnuts in Orange Miso Dressing. From Ani’s Raw Food Kitchen. 1 bulb fennel, thinly sliced. 2 cups golden beets, peeled and julienned. I used chiogga beets). 2 scallions, thinly sliced. I used red onion). 1 bunch arugula, torn into bite-sized pieces. 1 orange, peeled and seeded. 1/3 cup olive oil. 1 tablespoon grated ginger. I’ve found some delicious recipes over the last few days. I got a new cookbook (. By Sergei and Valya Boutenko) and it’s been a great find. We made chili with sprouted lentils and a marinated kale salad that were so good we almost inhaled them. The chili feels warm because of the spices, which was nice on a chilly early fall day. 2 cups tomatoes, chopped. 1 cup dried tomatoes. 1/2 cup olive oil. I just used a 8.5 oz jar of sun-dried tomatoes in oil.). 1/4 cup lemon juice. 1 heaping tablespoon cumin.

Waffles, French toast, huevos rancheros, that egg dish thing that always shows up a potluck brunches, yogurt and granola, cinnamon rolls…they’re all off limits now. I have to admit that the first time in doing the raw diet I was a bit of a chicken–I would soak nuts, but not grains (why? I don’t know! And I certainly didn’t make almond milk. Well, I’m feeling quite silly as almond milk is super easy to make and super tasty. I do not have a nut milk bag, so I thought I would wing it with some paper towels and a fine-mesh colander and it turned out perfectly fine. My recipe produced less quantity than I had anticipated, but the quality was there! Because I miss her.
