MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, August 30, 2014. CORN, FROM ILLINOIS TO SPAIN. Sweet corn- not Illinois, but not bad. You can take the girl out of Illinois, set her down in Spain beneath an olive tree, but you can’t take the CORN. Corn did not do well in the poor, sun-baked soil on our hillside in southern Spain and we gave up growing it. But, a few years down the pike, I discovered a local source for sweet corn. Inland, on the vega. While Spaniards have been ...

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, August 29, 2015. THE LAST GRILL OF SUMMER? Fire up the grill! It’s the last weekend of August—occasion for, maybe, the last cookout of the season. The days are getting shorter, the evenings cooler (although the mosquitos haven't abated yet). Soon I’ll be happy to turn on the oven again. But, for now, it’s a grilling feast. I’ve got a huge sack of carbon de encina. The ribs I marinate in garlic, salt, pepper, thyme, parsley and S...

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, February 28, 2015. THE MANY SHADES OF PURPLE. Vegetables in many shades of purple. I love all things vegetable. Raw, cooked, green, yellow, leaf, stalk or root. And, I’m a sucker for novelty. So, when I saw those lumpy looking purple potatoes, how could I not try them? Potatoes have purple flesh. The skins of the potatoes are deep brownish-purple, but cut one open and it reveals a deep purple on the inside. Purple potatoes p...

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, December 27, 2014. CLEMENTINES FOR HOLIDAY CHEER. The brightest spot on a winter’s day is the sunny glow of clementines dangling from the tree in my garden. I’ve picked off all the low-hanging fruit, a few every day, to eat out of hand. Now I need to get my tall son to pick what remains from the higher branches. Remove peel and pith. Duck breast with clementine sauce- an elegant dinner. Magret de Pato con Salsa de Clementinas.

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Sunday, June 28, 2015. We promised Lucas, my 10-year-old grandson, who loves shellfish, that we'd go for a crawfish feast while visiting near New Orleans. But, at Crabby Shack. In Madisonville, LA, near the Tchefuncte River, we found out that the season for crawfish was over (March to mid-June). So we had to settle for big Gulf shrimp. Some other dishes from dinner at Crabby Shack. A po-boy sandwich of fried soft-shell crabs. We're going ...

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, May 30, 2015. LET THE GRILLING SEASON BEGIN! I missed the “official opening” of the grilling season (Memorial Day is not a holiday in Spain), so I’m opening the season this week, celebrating the arrival of a new (used) charcoal/wood grill. En grills ibérico pork, asparagus, potatoes and mushrooms over charcoal. The cut I bought was the presa. Cut of ibérico pork called presa. Rubbed with garlic and herbs. Son Ben was the grill m...

MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, September 27, 2014. CAN'T QUIT WITH THE SQUID! Paella from the dark side, with squid ink. I couldn’t leave the squid chronicles without making one of my favorite recipes— arroz negro. 8212;a sort of paella with squid and other shellfish in which the rice is tinted black with squid ink. Sachets of cuttlefish ink. Pour red or rosé wine with this rice and shellfish dish. I like Jordi’s black rice, yet here I include a version...

MY KITCHEN IN SPAIN: WELCOME TO MY KITCHEN IN SPAIN
http://mykitcheninspain.blogspot.com/2009/11/welcome-to-my-kitchen-in-spain.html
MY KITCHEN IN SPAIN. SPAIN: Food, tapas, markets, tastes, recipes. Saturday, November 28, 2009. WELCOME TO MY KITCHEN IN SPAIN. From my kitchen window I look over the tops of olive trees, down a long arroyo, across rolling hills to the Mediterranean sea. My house is tucked in a small olive grove in southern Spain, where I’ve lived for more. Than 30 years. From my window, I often watch a herd of goats traversing the hillside or hear partridge call at the bottom of the arroyo. What impressed me about Spani...
